हमारा A2 देसी गिर गाय का घी वेदों में बताए गए 5 ‘संस्कारों’ के अनुसार बनाया जाता है, जो शुद्ध देसी घी बनाने की पारंपरिक विधि है। ये संस्कार हैं— उबालना (घी बनाने के लिए केवल घास-चरी हुई गायों के दूध का उपयोग किया जाता है), दूध का जमाना, मथना, अलग करना और पकाना। मथने के लिए लकड़ी की मथानी का प्रयोग किया जाता है। पकाने के लिए धीमी आंच पर उपलों (गोबर के कंडों) की आग का उपयोग किया जाता है, जिससे घी के आवश्यक पोषक तत्व और फैटी एसिड सुरक्षित रहते हैं।
इस प्रक्रिया में लगभग 25 से 30 किलोग्राम दही से 1 किलोग्राम घी तैयार किया जाता है। तैयार घी में बहुत कम या बिल्कुल भी लैक्टोज नहीं होता, इसलिए यह लैक्टोज असहिष्णुता वाले लोगों के लिए भी सुरक्षित है। घी शरीर के ‘वात’, ‘पित्त’ और ‘कफ’ को संतुलित करता है। घी का स्मोकिंग पॉइंट लगभग 250°C होता है, इसलिए इसे सबसे उत्तम पकाने के माध्यमों में से एक माना जाता है। आइए, हमारे देसी घी की शुद्धता और गुणों के साथ अपने दिन की शुरुआत करें।
